Although there is no added fat other than the tiny amount in the chocolate chips, these muffins are moist and delicious. However, if you so choose you can make them completely fat free by eliminating the chocolate chips and substituting them with raisins. Because the muffins contain bananas, oatmeal, applesauce and not too much sugar, they also make a healthy snack for kids. This particular recipe makes twelve large muffins that will keep for several days. The preparation time is 15 minutes and they take 30 minutes to bake.
Ingredients
- 3 very ripe bananas
- 1/3 cup skim milk
- 1 egg
- 2 tbsp plain fat free yogurt
- ½ cup unsweetened applesauce
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- ½ cup oatmeal
- 2 cups flour
- 1 tsp. baking soda
- 1 tsp. salt
- ½ cup chocolate chips
- Non-stick spray
Directions
- Preheat the oven to 350 degrees.
- Place large paper muffin liners in a muffin pan. Spray the insides of the paper liners with non-stick spray so the muffins will not stick to the paper.
- In a large mixing bowl, thoroughly mash the bananas with a fork.
- Mix in the egg, skim milk, brown sugar, white granulated sugar and the unsweetened applesauce.
- Add the oatmeal and stir it in completely.
- Using a separate bowl,combine the flour, baking soda and salt. Mix these dry ingredients until they are evenly distributed.
- Gradually add the dry ingredients to the wet ingredients. Mix these together until you have a smooth batter.
- Fold in the chocolate chips.
- Divide the batter equally among the 12 muffin cups.
- Bake in a 350 degree oven for 30 minutes or until an inserted toothpick comes out clean.
- Remove the muffins from the oven, take them from the muffin tin and cool them on a wire rack.
Variations for this Recipe
This muffin recipe can be varied in a number of ways. All of the following variations will result in a moist muffin that has absolutely no fat, provided that you eliminate the chocolate chips. If you choose to keep the chocolate chips, you will once again have the small amount of fat content that is present in the chocolate chips.
- Use a package of apple cinnamon instant oatmeal breakfast instead of the ½ cup of oatmeal.
- Place a large dried banana chip on the top of each muffin before placing it in the oven.
- Remove the chocolate chips and add ¼ cup of unsweetened cocoa powder and ¼ cup more granulated sugar. This will give you the chocolate flavour with none of the fat. However, there will be more sugar.
- Substitute some of the white flour with whole wheat or barley flour.
- Frost the muffins with cream cheese icing.
